Rose & Red Berry Cheesecake

Macroom Ricotta is made with buffalo milk whey. It is a creamy curd cheese made from the whey which is a by product of cheese making. Ricotta is very versatile, can be used in savoury and sweet dishes so here is my recipe which I use for making cheesecakes without using gelatine.
