New Big Cheese down on the farm

Great news, the Cheesemakers are making Burrata! This is the ultimate indulgent mozzarella cheese for sharing of course! It's only produced on Tuesdays, by Sam and available in small batches for a few outlets in Cork.

When the cheesemakers are making mozzarella, cultured cream is left over in the stretching water....and Johnny hates waste!

So ,when this cream is cooled and set after Mozzarella production, 300g balls of mozzarella are moulded and filled with cream and trimmings so its extra unctuous to enjoy.
